Turron d'Alicante is a type of hard nougat that is traditionally crafted in Alicante, Spain. Renowned for its crunchy texture and delicious blend of almond and honey flavors, this nougat is a must-try delicacy.
The main ingredients of Touron d'Alicante are as follows:
Whole almonds: Marcona almonds are generally used, which are of the highest quality and provide the characteristic taste and texture.
Honey: this is a key ingredient that adds sweetness and flavour.
Sugar: complements the sweetness of the honey.
Egg white: used as an emulsifier to bind the ingredients together.
Wafer: a thin layer of wafer is sometimes used on the top and bottom of the touron to hold it together and make it easier to handle.
To create 'turrón de Alicante', almonds are roasted and combined with honey and sugar. The mixture is then cooked until it reaches the desired consistency. Afterwards, egg white is added to ensure that all the ingredients are well blended. Finally, the mixture is poured into molds, cooled, and cut into blocks or bars. This nougat is a favorite during Christmas in Spain and is known for its firm texture and sweet, crunchy flavor. Just like the soft nougat from Jijona, this turrón is a traditional and iconic Spanish confectionary. It is guaranteed to be of supreme quality by the Regulatory Council for Protected Geographical Indications Jijona and Turrón de Alicante. Its classic, homemade recipe emphasizes the importance of origin, production, and ingredients.
